Austrian pumpkin soup

Some Austrian friends showed us this pecipe. We liked it so much, so we decided to cook it by ourselves. It turned quite good, so we decided to share it with you, so you can try it too.


Ingredients (4 people):
1 kg pumpkin
1/2 kg onions
1/4 kg sweet cream
– spice nutmeg
– salt and pepper
– stock cube
– white wine

Peel the pumpkin. Cut the onions and the pumpkin in cubes and put them in a pot. Fry the onion in oil untill it gets a bit golden, then add the pumpkin and the wine.
Add the water and the stock and simmer for 15-20 mins, until the pumpkin is tender.
Use a mixer to make it creamy. Add the cream to give the soup a smooth, rich texture.
Add spices and serve it.
